10 Days of Crock Pot Meals: Salsa Chicken

This crock pot salsa chicken dish has become my “new mom” meal. I make it in the crock pot and then transfer to a foil pan when I need to prepare a meal for someone else.

The best thing about this salsa chicken dish is that you don’t even need to use a spoon or fork. You can scoop it straight out of the bowl with tortilla chips! Serve with sour cream, chips and cornbread!

  1. Yum! That looks so good, almost a cross between tortilla soup and chicken enchiladas. Can’t wait to try it, maybe even as a table appetizer with plenty of tortilla chips.

  2. This looks great! My husband loves ALL THINGS MEXICAN inspired! Soooo….on the menu to try this one goes!! 🙂 Thanks for this series – I’m really enjoying it!
