This soup is so versatile it is hard to even write a recipe. Feel free to use whatever leftovers you have to make this delicious and tasty beef soup. This is a great way to use up all the vegetable leftovers you have in your freezer. You are freezing your leftover vegetables, aren’t you?

Beef Soup

Ingredients

  • 2 cups leftover pot roast - cubed
  • 3 potatoes peeled and cubed
  • frozen peas
  • frozen corn
  • frozen carrots
  • 1 can mushroom gravy
  • minced onions (you could use the real stuff if you have it)
  • salt, pepper, garlic to taste
  • beef broth - enough to make it look like a soup

Instructions

  1. Dump everything in a crock pot.
  2. Cook on high for 4 hours.
  3. Pour soup into bowls and serve.

Bread Bowls

If you want to make this soup suitable for company serve it in bread bowls. Looks cool and less dishes.To make bread bowls use your favorite bread recipe, I use my basic whole wheat bread.

Instead of shaping into loaves after the first rise, make softball sized rolls. (Make them smaller or larger depending on the appetite of those who are eating). Cover and let rise for about 40 minutes then bake for 20 minutes at 350 degrees.

After the rolls are finished, slice off the top and scoop out the middle. Personally I eat all the middles, but if you are a better hostess than I, cube it and serve with the soup.

The best thing about this meal is that it is almost free. Everything except the bread bowls (under $1), spices and mushroom soup were leftover from another meal! The total cost of this meal is around $2 for 8 servings! That breaks down to $0.25 a serving.

Delicious, healthy, balanced and super cheap!

  8. Hi Toni this is a great idea. We are PCSING next month and this is what we are doing. We dont want basically anything left in the kitchen so we are pantry eating and making do with what we have. This is a great idea.

      Mushroom gravy, you could probably use beef gravy, or omit it. I added it because the gravy had been in my pantry a long time!
