Cheesy Baked Mexican Rice
- 4 cups cooked rice
- 1 cup shredded colby jack or cheddar cheese, divided
- 2 eggs
- 1 cup milk
- 1/2 cup salsa
- 1/2 cup sour cream
- 1/2 teaspoon salt
- In a bowl mix all the ingredients but using only half the cheese.
- Spread into a greased 8x8 pan or similar casserole dish and spread remaining cheese on top.
- Bake at 400° for 20-25 minutes or until hot through and cheese is melted.
