A simple pasta salad with fresh garden taste is sure to be a hit at any potluck or summer BBQ!

Easy Caprese Salad


  • 16 ounces pasta, small shape preferred
  • 4-6 ounces fresh mozzarella balls
  • 8 ounces fresh cherry tomatoes
  • 3-4 basil leaves
  • 2 tablespoon olive oil
  • 1/4 cup vinegar
  • 1/8 cup sugar
  • 1 teaspoon minced onion
  • pinch of minced garlic
  • salt and pepper


  1. Prepare pasta according to package directions, drain and cool completely.
  2. Slice cherry tomatoes in half, lengthwise.
  3. Cut 3-4 basil leaves into small pieces.
  4. In a large bowl, combine olive oil, vinegar, minced garlic, minced onion, and sugar.
  5. Stir in the pasta.
  6. Season with salt and pepper to taste.
  7. Toss in cherry tomato halves, chopped basil leaves and fresh mozzarella balls.
  8. Stir well.
  9. Serve right away, or chill until ready to serve.

    I saw a great tip on the Rachael Ray show for cutting many cherry tomatoes at one time.
    Put the tomatoes in a plastic lid (the kind from a sour cream or salsa), place a second lid down on top of them so they are sandwiched between, hold the top lid firmly and using a long serrated knife (like a bread knife) carefully slice horizontally between the two lids! Easy peasy!
