Maple Oat Bread with Cinnamon Swirl at The Happy Housewife

This bread is so delicious, I made it for French toast, but it tastes quite good with some butter and a glass of milk. There are three variations of this bread. The first would be to omit the swirl. Second, follow swirl directions but instead of using butter, brown sugar and cinnamon, just use cinnamon. The third option is the one below. This bread is very, very sweet, and I would recommend using the butter/sugar swirl combination if you plan on cooking the bread a second time, either in a casserole or French toast.

Maple Oat Bread with Cinnamon Swirl


Bread Dough

  • 1 cup plus 2 tablespoons lukewarm water
  • 2 1/2 teaspoons instant yeast
  • 1 tablespoon maple syrup
  • 4 tablespoons unsalted butter (softened)
  • 1 1/2 cups rolled oats, ground to a powder (use a blender or food processor)
  • 3/4 cup whole wheat flour
  • 1 teaspoon gluten
  • 1 teaspoon orange juice
  • 2 cups all purpose flour
  • 3 tablespoons brown sugar
  • 1/2 teaspoon maple flavoring
  • 1 1/4 teaspoon salt


  • 4 tablespoons butter
  • 1/3 cup brown sugar
  • cinnamon


  1. Combine all the dough ingredients.
  2. Knead until the dough is soft.
  3. Let rise until the dough has doubled.
  4. Once the dough has risen, roll out as thin as possible. The thinner the dough, the more swirls.
  5. Melt the butter and mix with brown sugar.
  6. Spread on the bread dough.
  7. Sprinkle with cinnamon.
  8. Roll up, like a cinnamon roll, making sure to seal the edges.
  9. Place roll in a loaf pan making sure to tuck the ends down.
  10. Let the dough rise for another 1 1/2 hours or until doubled.
  11. Bake in 350 degree oven for 30-40 minutes. After 20 minutes tent with foil to keep the crust from burning.
  12. Slice and serve.


This is a heavy bread. It will not rise like a typical loaf of bread, but it should at least double in the loaf pan before baking.

  3. This looks so good! Where do you get gluten from? I keep seeing it in recipes and so far have just avoided those recipes, but I think if I want to branch out from the basic breads I make, I need to get some gluten. Thanks!

  4. just another question about the size of the loaf pans. If you would tell the measurements and where you measured (top or bottom) that would be helpful. I have 2 different size loaf pans and most often have to guess which one fits the recipe. I am still learning and take any helpful hints possible so my family can enjoy healthy, tasty food.     (oh and had to tell you my husband did like the butternut squash soup, it was so creamy I think that is what did the trick, as he is not into just chunks of cooked squash)

  21. This bread sounds really good. I’m gonna have to try it someday. I miss making bread. Never seem to have the time to make it any more. I remember when I made bread more often when I stayed at home as well. I do make some yummy rolls with the angel flake biscuit recipe I’ve had for years. Am gonna make some this Friday to take to my sister’s this weekend. Make rolls then I make small cinnamon rolls or cheesy rolls out of what’s left. I’ll blog that soon. Now I need a slice of your bread and a hot cup of tea. It’s cold here!!!

    I’m currently living overseas and there is no Wal-Mart to buy gluten from. I’ve asked at the health food stores and they just look at me like I’m crazy (“flour has gluten in it” is the usual reply). What will happen if I leave the gluten out?

  28. Would this be a recipe that you could sift the bread (adding in the bran later/seperately) and avoid the gluten? As you wrote about in a recent post.

      No, you would still have gluten in the bread so anyone with a gluten intolerance could not eat it.
