Menu Plan ~ Snowed In

It is amazing how creative you become with your meals when you truly must eat from your pantry. After the Blizzard of 2010, we were stuck and the grocery stores were closed. It was amazing to see such a huge area shut down. I was forced to get really creative with our meals and we survived. 🙂

A few highlights were a new pancake recipe and pigs in a biscuit. I look forward to shopping this week and replenishing my almost empty pantry.

Menu Plan

Breakfast

Whole Wheat Pancakes, French Toast on Maple Oat Swirl, Oatmeal, Eggs on English Muffins, Whole Wheat Waffles, Fruit

Lunch

Sandwiches, Leftovers, Spinach Smoothies, Cheese and Crackers, Fruit and Veggies

Dinner

Baked Spaghetti

Served with salad and bread sticks

Salisbury Steak

Served with corn, broccoli, and applesauce

Split Pea Soup

Served with whole wheat rolls

Open Tacos

Served with leftovers

  3. Oh! Your open tacos remind me of the tostadas my mama always made! They looked just like that, and then she’d pile on lettuce and whatever veggies were on hand. So good!

  4. We pretty much devoured our stockpile as well! I am headed to the grocery store tomorrow. I enjoyed seeing your creativity…we even had omelettes with salsa and cheese in the middle one night.

    Can you pre-make your pizza dough and freeze it? At what point during the process do you freeze/refrigerate it? Thanks for your tips!

      I bake the pizza crust (without toppings) for about 5 minutes. Then I freeze it. When I am ready to use it, I thaw, add toppings, and bake for about 10 – 15 more minutes, depending on the thickness of the crust.

  7. I made pigs in a blanket for the first time a few weeks ago, when I found organic, nitrite free hot dogs at the grocery outlet store. My son, who has had hot dogs maybe half a dozen times in his 4.5 years, danced and sang because he liked them so much! It was hysterical! He’ll happily eat lentils and kale, but he’s never danced for them. 🙂

    We’ve been snowed in also. I had to make hubby run to the store in the middle of the blizzard to get pedialite for my munchkin who couldn’t keep anything down! I was hoping we’d be done with snow for a while but it’s snowing now! And we’re supposed to get another huge storm this weekend. 🙁
