Menu Plan Monday Week of May 11th

We are finally finishing up all our yummy food from the past week. The baked salmon was a big hit and will definitely be added to our menu rotation. With the summer months quickly approaching our menu will change a little. I don’t like to use the oven much in the summer because it really heats up the house. This is probably our last month of casseroles and baked dishes for a while. Maybe I will attempt grilled pizza again this summer…


Kids are still on breakfast duty, this is working so well I might never make breakfast again!

Cereal, Bagels, Pancakes, Oatmeal, Eggs


Leftovers, Sandwiches, Banana Muffins, Crackers, Fruit, Smoothies


Monday – Chicken and Rice Casserole, green beans

Tuesday – Mexican Chicken Skillet (a great way to use up your Mexican leftovers!)

Wednesday – Turkey Tacos

Thursday – Marvelous Meatballs, corn, fruit, French bread rolls

Friday – Pizza with whole wheat crust

  1. so, how are old are the children that make breakfast? Do all of your children eat the same thing every morning? if I make oatmeal some won’t eat it and the two older ones that can ‘fend’ for themselves-do, so the two little ones need assistance. thanks for your encouragement. Anxious to know about your summer meals

    the meatballs sound tasty – especially with all the veggies… and I love that you made it in your mixer — I never thought of that (and I hate touching raw meat too)!

    I have a recipe that you might like for your family. ALL my kids love it. Swedish meatballs. you can used your own homemade, or frozen prepackaged. I use prepackaged so you probably want to cook the meatballs first, if you make your own. Place meatballs in crockpot (I put them in frozen) on low pour 2 jars of beef gravy over meatballs. Add one cup of sour cream. Cook on low for about 4 to 5 hours. Serve over egg noodles, or your own favorite noodles. We have galic bread and green beans or salad w/ it. Sometimes I also add a can of mushrooms to the sauce. It’s quick and easy. Grace sometimes will put this together for me.

  7. Great idea with the meatloaf! I feel so guilty for barely using my fancy kitchen aid mixer. It just never occurred to me to use it for meat! I will definitely try your recipe!

  9. My youngest (14) won’t eat salmon because his dad cooked it all wrong the one time he did have it and it was nasty!

    I just have to say I was reading your blog and my 6 year old came over and read “The Happy Housewife” & so I explained that this was your blog, you had 7 kids and homeschooled, and that our homemade pizza is your recipe… my daughter said “WOW! she must get up at like 5 to get everything done!” You are admired by all of our family!!!   11. Sure, you’re going to grill more pizzas, LOL! My new goal is to re-create roasted carrots on the grill – it’s the only way I’ll get my son to eat his carrots this summer.
