Menu Plan Week of January 19

It is back to reality. After almost two weeks of vacation, meals out, and delicious home cooked meals by my extended family it is time to menu plan again. Hopefully my 30 Days of Meals will make menu planning a breeze the next few weeks.


Breakfast- Whole wheat waffles

Lunch- Sandwiches, fruit

DinnerSalmon turnovers, (family favorite) veggies, salad


Breakfast- Oatmeal

Lunch- Chocolate chip muffins, fruit

DinnerBean soup, cornbread


Breakfast- Eggs, biscuits

Lunch- Smoothie, cheese, crackers

DinnerTuna casserole (recipe coming), veggies


Breakfast- Whole wheat pancakes (recipe below)

Lunch- Sandwiches, fruit

DinnerBaked ziti, salad, garlic bread


Breakfast- Oatmeal pancakes (my kids did not like these when I made them before, but I am trying again)

Lunch- Sandwiches, fruit

DinnerWhole wheat pizza, salad


  • 1 1/2 cups whole wheat flour
  • 3 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 tablespoon white sugar
  • 1 1/4 cups milk
  • 1 egg
  • 3 tablespoons butter, melted

Mix together and cook on a hot griddle.

  3. My family does not usually like oatmeal waffles either. I think it is a texture thing. I have found a recipe though that they really like because you grind the oatmeal. Not only that it is a homemade pancake mix. Here is the link if you want to try it. Maybe your family would like this version.

  5. I noticed tuna casserole on your menu! That is my oldest son’s favorite meal! I don’t really know why, but he requests it all the time…for years! I’d love to have you join us for Tasty Tuesday one day!

  6. I enjoy seeing the meals you prepare for your children. We have four children under five and they frequently want to eat between meals. Is there “snacking” that goes on in your home? If so, what options are available?

  7. Have you ever had the harvest grain pancakes at IHOP? I found a recipe that I like that is similar except that you grind the oatmeal.
