Mexican Chicken Skillet

Mexican Chicken Skillet Meal at The Happy Housewife

You can add as much or as little rice as you like to this recipe. I used 3 cups of uncooked rice. I like to use more rice because then I can use less chicken. I also used brown rice. When mixed with the salsa, it tastes great and the kids don’t seem to mind!

My family eats this two ways. Some eat it just as it is and others put it on a tortilla with sour cream, lettuce and cheese. It is delicious either way.

Mexican Chicken Skillet

Yield 8

  • 1/2 cup chopped onions
  • 1 tablespoon olive oil
  • 1 tablespoon minced garlic
  • Chicken Breast (chopped)
  • 1 can corn (drained)
  • 1 can black beans (drained)
  • Cooked rice (when making your rice decrease the amount of water by about 1/2 cup and add 1 cup of salsa)
  • Tortillas

  1. Cook your rice according to the directions, except add salsa with your water.
  2. Coat large frying pan with olive oil. Saute onions and garlic and add chicken.
  3. Add the beans and corn.
  4. When everything has been heated through, add the cooked rice and serve immediately.

When this post was published in 2009, the total cost for the meal was $4.85  ( I did not factor in sour cream, cheese, or lettuce so add about $1.50 to the total if you serve it that way) This feed all 8 of us tonight and we had leftovers. Here is the breakdown:

  • 1/2 cup chopped onions  $.30
  • 1 tablespoon olive oil  $.10
  • 1 tablespoon minced garlic $0.10
  • Chicken Breast (chopped) $.75
  • 1 can corn $0.55
  • 1 can black beans $0.55
  • Cooked rice $1.00
  • Tortillas $1.50

  1. Looks delicious! I’ll have to bookmark this; I think my husband would really like, except he’d probably want to spoon everything on to a flour tortilla!

  2. I have made this at least twice for my family since finding it on your site and we all love it. We add the salsa later individually along with sour cream and shredded cheddar.

  3. Thanks for joining us for Tasty Tuesday! This looks great and it looks easy to make. We eat a lot with black beans and I use brown rice all the time. I’ll have to try this one day soon! Thanks for the recipe!

  4. This has so many of the ingredients that my boys love. Will have to give it a try!

  5. I added this to my menu for next week. It sounds delish!!

  8. This recipe looks really good and sounds like it would be so simple to make. A lot of the ingredients that you have included in this meal is things that my family eats. Thank you for the recipe.

  9. Thanks for a nice cheap recipe! I can’t believe you price everything out like that. How amazing : ).

  10. This looks really yummy. I’d have to omit the corn as my hubby doesn’t like it, but I’ll bet it would still be delicious. Thank you for the recipe!

  11. Oh my gosh – what an AMAZING idea to cook your rice in salsa!!! I’ll bet it adds so much flavor. I can’t wait to try it!

  12. We ate this for dinner tonight – yum!! It was so good, and so filling too!

  13. I have been keeping a zip loc bag of burritos in my freezer – each burrito individually wrapped in wax paper.I take one to work every day and microwave it for lunch. This saves having to make a sandwhich in the morning. your recipe looks perfect for my plan.

  14. Wow this sounds YUMMO! I’m adding this to my meal plan next week. Thanks so much!

  15. Yummo – this one was calling to me “dh will love this.” I agree, the rice idea is great. Made it just now and waiting to combine rice with the rest when he comes in, any minute. Thanks! (i make something like this in the crock pot – but nice to have a fast version, too)

  18. I’ll have to add this to our recipes. It’s definitely something we’d like and I am always looking for recipes to feed 8 or 9! Thank you!

  19. This reminded me of a homemade Qdoba/Salsarita’s/Moe’s burrito… way cheaper than eating out!
I forgot to put the cheese and sour cream on the table until we were almost done though 🙁 I think that would have added a bit more flavor, but it was still very yummy! Since there’s only 2 of us, I’ll have to remember the add-ons for the leftovers in the next few days!
    Thanks for sharing your recipe!

  20. Going to the grocery store is determined by the lack of ingredients i have left in this recipe. This is my all time favorite grub to eat…. cheap and easy… that’s how i roll.

Toni, Thank you for sharing this recipe it is so good. Our new 21 month old son loves it as much as we do. He doesn’t normally eat rice and I kept some of the rice out for myself he ate more than I.
