No Mess Potato Pancakes at The Happy Housewife

Potato pancakes were on our dinner menu last week, but they could also be served as a hot breakfast. This is a great leftover makeover and helps use up all the little amounts of food you have in your kitchen.

No Mess Potato Pancakes

Ingredients

  • Leftover mashed potatoes (about 3 cups)
  • 1 cup “just add water” pancake mix
  • 1/2 cup sour cream
  • 2 eggs
  • Oil (for frying)

Instructions

  1. Mix all ingredients together in a bowl. A potato masher works well for this job.
  2. While mixing, heat a frying pan on the stove top with a small amount of oil or butter. If you have a cast iron skillet use it, it is awesome for frying food.
  3. Here is where the no mess comes in, the next step should be shape into patties and put in hot pan, but this is so messy! I was washing my hands after each batch. So I tried a mini ice cream scoop. It worked perfectly.
  4. Scoop up the mix.
  5. Drop into hot pan.
  6. Then take the spatula and flatten the potato ball. This is a little tricky, try quick taps so it doesn’t stick to the pancake.
  7. Cook for about 4 minutes on each side or until golden brown.
  8. Serve as a side with dinner or with syrup for a hot breakfast.

  1. That’s pretty brilliant using mashed potatoes. We make latkes (the yiddish word), but we use hash brown style shredded potatoes. They’re a mess for sure. I will for sure be trying this version next time. Thanks for the idea!

  2. This sure does bring back memories. My mom used to make these (the shredded potato version) now and then, usually served with a fried egg on top and horseradish sauce. Makes my mouth water just thinking about it!

  12. I make these but I mix in the shredded hashbrown-type potatoes and some diced white onion with a sprinkling of parsley as well. It is SO wonderful. Serve with bacon and applesauce. Nothing better!

    We had something very similar to this growing up. It is one of my favorite treats, so I always try to make extra mashed potatoes for it. I eat mine it with ketchup.

  14. I love potato pancakes. I’ve never had it with pancake mix either. They’re also great with chopped green onion cooked in them and a little ranch dressing on them; almost like a fried baked potato!

  16. I make these with diced onions, a small amount of chopped banana pepper (if I have it), add an egg, some flour and some cornmeal, salt, pepper and a little bit of garlic powder. Everyone loves them:)

  18. As I was reading my facebook feeds this morning, I saw this and had to try it, especially since I had saved mashed potatoes from a previous supper. My hubby and kids loved them with ketchup and syrup (not at the same time, mind you). I think they have voted the syrup is the best with them. I like them both. It’s amazing that adding ketchup makes it taste like a hashbrown and if you add syrup it tastes similar to french toast. Thanks for posting it!

  19. My mom used to serve them with apple sauce as a side every time we had ham for dinner. She used leftover mashed, too. yum

  20. I use the ice cream scoop for muffins, pancakes, and waffles. I have two sizes. It sure helps to keep things a little cleaner.

  21. I spray a spatula with pam before mashing down the potatoes, this way it doesn’t stick when you mash them down.
