Menu Week of May 3rd

We are overflowing with food this week! Saturday morning some friends from church surprised us with chicken adobo and sticky rice. It was great and everyone loved it. Mexican Chicken Skillet

You can add as much or as little rice as you like to this recipe. I used 3 cups of uncooked rice. I like to use more rice because then I can use less chicken. I also used brown rice. When mixed with the salsa, it tastes great and the kids don't seem to mind! My family eats this two ways. Menu Plan Week of Jan 25th

Wow, I am loving my 30 Days of Meals. It has made menu planning so easy! I just look at the list and then pick 6 or 7 meals for the week. I wish I would have done this months ago!
