Vacation Menu Plan

This week I am on vacation, so menu planning looks a bit different. We are staying with family, which means that I will be doing some cooking, but the responsibility will be split between my mother and I. We are also spending some time at other family and friends’ houses so I want to be flexible and not over purchase food. To complicate things (or make them easier depending on what type of person you are) my parents are getting ready to move and they want to use up much of the food they already have in their house.

I looked through my mother’s pantry and came up with the following meals. I am not assigning them a day of the week since we haven’t finalized our plans for the week. This will allow me to shop for the needed food today.

Breakfast– pancakes, French toast, cereal, bagels

Lunch– Sandwiches, leftovers

Salmon Cake Sandwiches

Salisbury Steak

Mexican Lasagna

  3. Enjoy the vacation! Don’t overbook yourself; allow for some true downtime.

  4. Wow! I didn’t know if we’d hear from you much this week! The menu sounds great! Hope you have a wonderful time with your family!

  5. I am getting ready to move as well–doing the same thing your mother is doing–using up foods I don’t want to move but can’t give away. Lots of leftover baking supplies are getting a workout!
